ANSWER:

From a Roman Catholic perspective, it seems that the second (unofficial) sponsor does not have to the Roman Catholic. This role would be honorary and not truly religious or official. This would be the Orthodox view, that an Orthodox Christian cannot be the actual official religious sponsor or godparent, and this makes perfect sense. The role of honorary / second sponsor is a pastoral arrangement and things should be clear so as not to confuse anyone.

This is a matter when one should seek guidance from his parish priest and bishop to explain the situation as seek a blessing.
